Loaded Sweet Potato

Tara on Mar 15th 2010

Here’s a pleasing side dish that is much easier to make than sweet potato casserole. Just wash some large sweet potatoes, wrap them in foil. Then bake them at 425 degrees for about an hour, until potatoes are soft when you squeeze them. Next remove foil, slice potatoes lengthwise and fluff the sweet [...]

Mac-N-Cheesy

Tara on Dec 3rd 2009

I’ve been to many a church pot luck dinner in my life here in the South. There would always be an assortment of Mac-N-Cheese from the instant packaged Mac to someone’s Granny’s made-from-scratch Mac. Kraft Instant Macaroni and Cheese couldn’t hold a candle to the home made goods. Here’s a recipe that will rival your [...]

Tonya’s Cornbread Salad

Tara on Jul 27th 2009

Growing up here in the south, our family would have a couple of meatless meals a week during the hot summer months.  Often our meals consisted of cornbread along side a bowl of pinto beans, garden fresh tomatoes, cucumbers, and fried corn. So it is no surprise that I am a huge cornbread fan.  But [...]

The Best Jello Salad Ever

Tara on Jun 16th 2009

I’ve eaten many a Jello salad through the years.  There’s the popular “congealed” salad, which is OK, but I don’t care for the curds of cottage cheese.  For strawberry lovers there’s the Strawberry Pretzel salad, which is pretty tasty, until the pretzels go soggy.  And there’s also the Strawberry Jello Banana salad. Since dear hubby [...]

Sweet N Savory Bacon Broccoli Salad

Tara on May 3rd 2009

I’m always amazed when I take this salad to a gathering.  Most men I know prefer meat over greens any day.  But the guys often devour this dish.  I think the cashews and bacon entrance the males; they try it, and then come back for more.  Testosterone and bacon were meant to be together.

Crazy Crunchy Coleslaw

Tara on Apr 27th 2009

I’ve never been a fan of coleslaw until I made this one.  There are so many flavors that calm the cabbage.  The almonds, Craisins, peppers and green onions give it a crazy crunch.  This recipe yields a colorful coleslaw which makes a pretty presentation for all those back yard barbeques and garden parties ya’ll have [...]

Hilda’s Potato Salad

Tara on Mar 28th 2009

Both my Grandmothers were fantastic Southern cooks. Grandmother Bybee’s first name was Hilda. She was a unique woman, unlike anyone else I’ve ever known. Whenever we had family gatherings with her – she produced quite a spread. She would have 2 of everything. She always made 2 meats like ham AND beef. There were always [...]

Game Day Guacamole

Tara on Jan 21st 2009

This past May our home school group took a cruise to Cozumel and Cancun. If you are ever near Cancun – spend a day at Nachi Cocum beach. The food there was incredible and our kiddos discovered fresh guacamole while visiting.
I know there are many variations when making guacamole, but often the taste [...]

Festive Cranberry Pineapple Salad

Tara on Dec 18th 2008

Festive Cranberry Pineapple Salad
Over the years, I’ve sampled numerous cranberry salads.  Some were too tart.  Some were too sweet.  But this one is just right.  Sweet meets tangy for the perfect duo – and the crunch adds a nice pizzazz too.  Oh, did I mention it is pretty?? Did I also mention EASY??

20 oz can [...]
