Cuban Adobo Dry Rub Seasoning

Tara on Apr 20th 2013

We continue to experiment with our smoker and try different kinds of meats, sauces, rubs, and methods.  In order to please dear hubby, I recently created a Cuban feast at our house and I think he was very pleased.  We smoked 2 chickens and a pork roast.  Here is the recipe I created for the [...]

Mini Bacon Cheeseburger Pies – Gluten Free

Tara on Aug 28th 2012

This recipe is a slight modification of Texas Recipe’s Mini Cheeseburger Pies.  I whipped up a gluten free version and of course I had to add bacon for my family.  These little pies were incredible and stand alone as a hearty appetizer for football season, camping, or even breakfast.  E A S Y!

Walking Tacos – Themes and Variations

Tara on Nov 3rd 2011

Fall is the perfect time to host a bonfire or hay ride or campout.  My dear friend Karen and I spent some time catching up recently and she helped me brainstorm a little bit to come up with some new ways to serve guests at such outdoor gatherings.  By the time our visit ended, we [...]

$$ Frugal Friday – Bacon Cheeseburger Pizza

Tara on Aug 25th 2011

I debated wheather to let this post stand alone as a regular, or include it as a Frugal Friday post.  Now I know you can drop by Little Ceaser’s on Friday evening and pick up a cheap premade pizza.  And there are times when we all have to do so.  However, the males around here [...]

Mini Mexican Meatloaf

Tara on Mar 2nd 2011

If the thought of dry traditional meatloaf topped with ketchup lacks appeal, why not try giving meatloaf a little ZING?!  I like to make miniature portions of this Southern classic with Mild Rotel and top the little loaves with Restaurant Style Salsa.  And a small can of evaporated milk is the secret ingredient to keeping [...]

Sunday Dinner Pot Roast

Tara on Apr 20th 2010

Some things are just too easy, like Sunday Dinner Pot Roast. I can’t think of an easier “company’s comin’” meal than pot roast. As my family sat around the table Sunday, there was little conversation while they devoured beef and potatoes. I remember someone saying, “Mmm, I just LOVE beef!” The prep time for [...]

Beef Tenderloin with Blackberry Glaze

Tara on Mar 29th 2010

I wish my Dad were still living. I’d make him this dish for Father’s Day.  Nothing beats Filet Mignon for taste and tenderness.  Although tenderloin is served here only on special occasions due to cost, it is the leanest cut of beef.  Glad there’s a positive trade off!
Who would have guessed that beef and blackberries [...]

Italian Roast Beef Dip Sandwich

Tara on Feb 22nd 2010

I recently tried Pioneer Woman’s Drip Beef Sandwich.  It was a hit here in ‘Possum Town and one I will be repeating frequently.  I have modified the recipe slightly.  Pioneer Woman said I could.  Not really, but I know she wouldn’t mind me tweaking it and sharing with you.  It’s EASY and LIP SMACKIN’ good.  [...]
