Easy Chicken Pot Pie

Tara on Oct 18th 2011

Here is another cold weather favorite of ours.  Ya’ll know me well enough by now to remember I cook a lot with organic ingredients.  But sometimes, I deviate from what I preach, and bring some “processed” items home to the pantry.  I love to keep Chicken Pot Pie ingredients handy in the winter, because I [...]

Parmesan Poppy Seed Chicken

Tara on Apr 7th 2011

Every southern gal needs a quick and tasty one dish meal to whip up in 10 minutes when unexpected chaos arrives at mealtime.  This recipe is made with canned chicken in a pinch, but could also be made with a deli style rotisserie chicken or regular chicken breast if time allows.  But trust me and [...]

Tara on Aug 25th 2010

Here’s a quick recipe that is a family favorite here at home.  To avoid MSG, I used mostly organic ingredients, and olive for sautéing. Chicken Lettuce Wraps end up being healthier choice than Chinese takeout.

½ teaspoon Ground Red Pepper
¼ teaspoon Ground Ginger
1 teaspoon Sesame Oil
3 Tablespoons Soy Sauce (divided)
3 [...]

So I found them at Kroger on summer clearance recently for $6.99.
I LOVE [...]

Campfire Chicken

Tara on Sep 17th 2009

Fall is just around the corner and that means football, tailgating, camping, and bonfires.  I can’t think of a heartier, tastier meal than campfire chicken.  Assemble individual portions of campfire chicken in foil ahead of time so you can relax and enjoy your outing.  This is one of our family favorites.  I still remember asking [...]

Chicken and Dumplings

Tara on Apr 29th 2009

I can think of few main dishes with more Southern flair than Chicken and Dumplings.  I do not recall either of my parents making this dish in our home.  Chicken and Dumplings were given the respect they deserved.  Only my Grandmothers were worthy enough to make them.  There was no special family recipe written down. [...]
