Homemade Chicken Salad

Chicken-SaladHere’s a quick and easy spring and summer pleaser.  When I make this recipe, folks can’t believe it is actually made with canned chicken breast.  Sometimes I simply place the chicken salad over a bed of greens.  Sometimes I make those pretty little mini pastries.  But most of the time, this chicken salad goes on Sister Shubert’s yeast rolls!

  • 2 10 oz cans chicken breast (organic or Swanson) drained
  • ½ cup Hellman’s mayo
  • 2 celery stalks finely diced
  • 1 cup grape halves
  • 1 cup pecan pieces
  • 1 teaspoon celery seed
  • Salt and pepper to taste

In a medium bowl add drained chicken and flake with fork to separate.

Add mayo, celery, grape halves, pecans, celery seed, salt, and pepper.  Mix well. Refrigerate until ready to serve.  This salad does not last very long at our house!

    Tara, I just made this today for my husband’s lunch this week, it was so simple and easy, the ingredients to make it was not expensive either! I just gave one to my husband to try and he loved it! This will definitely be a receipe that I will use often! Oh and I told my neighbor about your website and she loves it, she has also made this and she said it did not last long around her house. She loves to cook and she is enjoying your website!

    Pam, I am glad it was a hit at your house. You can also add some pineapple, mandarin oranges, or apple piece – whatever your family likes. We make it a lot in the summer time and take it camping with us.

    This was so easy and SO very delicious. After I made it and my husband and I ate it for dinner I got to thinking I should have done a double batch. Ha ha…It will not be lasting long at our house either but it will now become a regular.

    DeDe is is SO easy using the canned chicken. I think Swanson’s is the best though.

    I have used canned chicken as well as regular chicken breast for what was a very similar salad and I thought both were very good. I have used green and red grapes in it (I don’t think I cut mine in half). Don’t remember putting in celery seed either but may be because I didn’t have it. I got my old recipe from church and a luncheon we were doing, but am not sure where the recipe is now. I love chicken salad and also apple salad, which I also put nuts in. I don’t recall if I used pecan or walnuts in it. I amthinking walnuts instead of pecans. I’ll have to try it this way if I can find those pecans in my freezer.

    Tara, I add honey to the mayo for a nautral sweetness & use both red & white grapes. My kids love it!
