Margarita-Pie

This pie recipe is a new creation of mine, made with Cinco De Mayo in mind. Serve frozen or slightly thawed for a refreshing treat as the thermometer rises.

  • 1 Graham Cracker Pie Crust
  • 1 10 oz can Bacardi Margarita Frozen drink mix
  • 1 can sweetened condensed milk
  • 1 8oz container Cool Whip
  • Limes for zesting

Prepare Graham Cracker Pie Crust recipe in a large 9-10” deep dish pie pan.
In a medium size bowl, add the frozen Bacardi Margarita mix and the sweetened condensed milk. Mix well and pour into Graham Cracker Pie Crust. Chill in freezer until frozen or well set. Before serving , top with Cool Whip and Lime Zest.

    Sharon, I have one of those Pampered Chef Decorating thingys and I just put the Cool Whip in that and shot it right out using the star tip. And it is best to keep it mostly frozen. Mine was runny when I let it thaw completely.

    I am just clarifying, before I try this… the Cool Whip does go IN the mixture, with the Bacardi and sweetened condensed milk, right? THEN into a pie shell, correct? It reads as if you mix the Bacardi with the sweetened condensed milk, pour in the shell, and top with the cool whip.

    Hello, when I made this pie, I saved the Cool Whip for the topping. But you could certainly add the Cool Whip to the Bacardi/condensed milk mixture if you wanted a different texture. It would probably set more firmly by adding the cream to the mix. This pie froze well when I made it, but was pretty messy once it thawed. I served it frozen. Wish I had some right now!

    Yes, according to many other Pampered Chef sources, you ARE supposed to fold the Cool Whip in with the condensed milk – you can always have an extra tub of whip for the topping (or just buy the larger tub) – makes a perfect pie!
    Also, the other sources offer a pretzel crust rather than graham cracker, crushed up pretzels with melted butter – YUM!

    Thank you for sharing this! My friend makes a variation of this in lime and I LOVE LOVE it. The idea of pina colada is making my mouth water. Going to do this one today. I think I am going to follow your recipe of the graham cracker crust. Sounds MUCH better to me than the pretzel crust.
