Blue Ribbon Carrot Cake

Blue Ribbon Carrot Cake
Preheat oven to 350 degrees. Generously grease and flour a 9×13 pan or 2 round 9” pans. Set pans aside.
Sift together in mixing bowl

2 cups flour

2 teaspoons soda

2 teaspoons cinnamon

Corn Pudding

My Grandmother Armstrong always put up bushels of Silver Queen Corn. Oh, how we all loved her corn. For holidays and special occasions, Granny would whip up a dish of corn pudding. I never did get her recipe, but this one rivals Granny’s.

Sinful Sweet Potatoes

 Sinful Sweet Potatoes
 

3 cups cooked sweet potatoes, mashed

¾ cup sugar

2 eggs, beaten

1 cup evaporated milk

½ stick melted butter

1 teaspoon vanilla

1 teaspoon cinnamon (optional)

 
Beat all ingredients together and pour into a greased 2-quart casserole dish. Cover with topping and bake in a 375 degree oven for 30 minutes.

Italian Pasta Salad

 Italian Pasta Salad
1 box rainbow noodles
1 head broccoli cut into florets
1 small head cauliflower cut into florets
1 cup carrots – sliced
3 stalks celery -diced
1 zucchini -diced
1 small can black olives
1 cup cherry or grape tomatoes – halved
1 regular bottle Kraft Zesty Italian Dressing
½ cup Parmesan cheese

Roasted Tomatoes

Roasted Tomatoes
Preheat oven to 325
In a Dutch Oven, or casserole dish with glass lid add:
4 boxes of cherry or grape tomatoes
1 teaspoon sea salt
1 Tablespoon fresh rosemary leaves
1 Tablespoon fresh thyme
4-5 cloves pressed garlic
1/2 – 3/4 cup olive oil

Better Cinnamon Rolls
