Homemade Pimento Cheese

Pimento-Cheese

My husband is a big fan of Pimento Cheese.  I remember his mother packing him pimento cheese sandwiches for lunch when we were in high school.  She makes the best I have ever tasted and in case you are wondering, hubby and I were high school sweet hearts.   Here is my feeble attempt to match my mother in law’s method.  Although dear hubby admits that mine is good, deep down I know my pimento cheese will always hold second place in his heart.

  • 2 cups shredded cheddar/Monterey jack blend cheese
  • 2 cups shredded Velveeta cheese
  • ½ cup Hellman’s real Mayo
  • 12 oz jar diced pimentos
  • Dash of Hot Sauce
  • Dash of cayenne pepper
  • 1 Teaspoon sugar

Mix all ingredients in a medium bowl and keep refrigerated until ready to use.  As with chicken salad, we love to eat pimento cheese on those wonderful Sister Shubert’s rolls but others may prefer regular loaf bread or even crackers.

    Great story and excellent photo. Your talking true Southern comfort here. I try to make a big bowl of pimento cheese a couple of times a month. Haven’t tried it with Sister Schubert’s rolls yet, but I love it on Wonder Bread or Westminster crackers (Hearty Squares). Two or three tablespoons in a bowl of grits is addictive.

    That sounds delicious and I think I will try it for supper along with the Sister Schubert rolls which I use for chicken salad but had not thought of to compliment pimento cheese. I really enjoy your website too!

    I love homemade pimento cheese and just a couple of things that I have learned – don’t make it with the already shredded in the package cheese – it makes a huge difference to shred it yourself (i use a salad shooter) AND while it makes it less fat to use something besides the real mayo – HELLMAN’s REAL MAYO tastes the best!!! There is no substitute for it!!

    Just my two cents! But this looks like a keeper recipe!

    Thanks for the comments Kristi. I will certainy try grating my own next time. I am pretty sure my MIL grated her own years ago because block cheese cheaper than shredded. Plus the shredded cheese has extra additives that is not found in the block cheese. Come visit again soon.
